These cookies are so easy to make and really delicious. You can add pecans or coconut, or anything you like.

Ingredients

1 - lemon cake mix
1/3 cup oil
2 - eggs
1/2 teaspoon lemon extract
- zest of one lemon
- powdered sugar for sprinkling on top

How To Make lemon cakemix cookies--so easy!

Step 1

Preheat oven to 350 degrees. Mix together all ingredients except powdered sugar.

Step 2

Prepare cookie sheets by lining with parchment or stick-free aluminum foil. Spray the foil with Pam. It really helps. Drop dough by rounded teaspoon onto cookie sheet.
Step 3

Sprinkle with powdered sugar. I keep a large salt shaker filled with Powdered sugar for easy use.
Step 4

Bake for 10-12 minutes at 350 degrees. The cookies should be slightly brown on the bottom. Let cookies cool for 5 minutes and then sprinkle again with powdered sugar. Delicious!
