lemon bars (the grab them fast or too bad for you bars)

For the past 20 years, this has been my GO TO recipe when hit by the lemon urge. The recipe comes from my ALL TIME FAVORITE RECIPES ( Better Homes & Gardens)cookbook. The first time I made them was as a treat for my husband and daughter who were going to be out into the wee hours running their paper route. They smelled sooo good while baking; but I went to bed without eating one. Too bad for me! Pan was empty when I got up! Live and learn. *** This looks just like my bars, but the photo is from the internet.

yield 20 bars, but hardly that many people, as you can't eat just one!

Ingredients

  • 1 cup all purpose flour
  • 1/4 cup sifted powdered sugar
  • 1/2 cup butter or margarine (i use butter)
  • 2 - eggs
  • 3/4 cup white sugar
  • 1/2 teaspoon finely shredded lemon peel
  • 3 tablespoons lemon juice
  • 2 tablespoons all purpose flour
  • 1/4 teaspoon baking powder

How To Make lemon bars (the grab them fast or too bad for you bars)

  • Step 1
    Set oven @ 350 degrees.Stir together 1 cup flour and 1/4 cup powdered sugar; cut in the butter till mixture clings together. Pat into ungreased 8x8x2" pan. Bake 10-12 minutes.
  • Step 2
    In mixer bowl, beat eggs; add white sugar, lemon peel and juice. Beat till slightly thick and smooth, 8- 10 minutes. Stir 2 tbsp flour and baking powder together, and add to egg mixture. Blend just till moistened. Pour over baked layer. Bake @ 350 degrees for 20-25 minutes. Sift more powdered sugar over top. Cooll, cut into bars. Then get out of the way so you don't get run over!!
