1/2 c
confectioners' sugar
2 c
all purpose flour
1/2 tsp
eggs, well beaten
2 c
granulated sugar
5 Tbsp
lemon juice
2 Tbsp
grated lemon rind
confectioners' sugar

How to Make Lemon Bars


  • 1Preheat oven to 300 degrees.
  • 2In a large bowl, cream together butter and confectioners sugar; then blend in flour and salt.
  • 3Press mixture down in a flat buttered cookie pan.
  • 4Bake at 300 for 20 minutes.
  • 5While crust is baking, in a medium bowl blend together eggs, granulated sugar, lemon juice and rind and pour over crust.
  • 6Raise temperature to 350 and bake for an additional 15-20 minutes.
  • 7Remove from oven and let cool.
  • 8When cooled, sprinkle with additional confectioners sugar and cut into rectangles.
