Ingredients
- 1/2 cup flour
- 3 tablespoons cornstarch, sifted
- 3 large eggs, separated
- 1/2 cup sugar
- 1 teaspoon vanilla

Step 1Grease and flour 2 large cookie sheets. On wax paper sift together flour and cornstarch, set aside. Mix egg whites until soft peaks are formed. Gradually beat in 1/4 cup of the sugar until soft peaks form. Without washing beaters mix yolks in another bowl at high speed with remaining sugar and vanilla until thickened and lemon colored. Gradually beat flour into yolks until blended. Fold in whites about a third at a time, by hand, until blended. Spoon batter into a pastry bag fitted with a plain round tube about 1/2 inch wide. Hold bag at a 45 degree angle and press batter onto sheets as fingers about 3 1/2 inches long and 1 inch wide. Sprinkle with powdered sugar and let stand 5 min. Bake one sheet at a time at 350 degrees 8-10 min or until set and tinged with gold. Remove immediately to wire rack. Cool completely. Store in airtight containers.
