kitty's chocolate mints

My mother always made spritz cookies for every holliday. This recipe combinds that tradition with a modern influence of mine. Enjoy for Christmas, New Years or Valentine's Day!

Ingredients
- 1 cup butter, softened
- 2/3 cup sugar
- 1 - large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all purpose flour
- 1/3 cup cocoa, unsweetened
- 1/2 teaspoon salt
- 16 ounces package oreo chocolate sandwich cookies—i use the mint ones
- 8 ounces philadelphia cream cheese, softened
- 7 ounces peppermint candies (the round red and white kind)
How To Make kitty's chocolate mints

Step 1preheat oven to 350 deg

Step 2Cream butter, sugar, egg and vanilla in a large mixing bowl until light and fluffy

Step 3Add mixture of flour, cocoa and salt gradually and mix well. Chill dough for 10 min in mixing bowl before adding to cookie press

Step 4Press dough through cookie press onto cool ungreased cookie sheet (I used a round pattern). Bake at 350° for 10 to 15 minutes or until set

Step 5Remove cookies onto wire rack to cool completely Crush or grind peppermints in food processor to a crumb and place on a plate for final garnish

Step 6Grind Oreos in food processor until fine and add soft cream cheese. Blend until smooth

Step 7Spread room temperature filling on the flat side of one cookie and place another on top to form a sandwich. Press down so that filling bulges out on sides a little bit

Step 8Roll the edges of each sandwich in crushed peppermint and allow them to firm back up in the fridge before serving
