My mother always made spritz cookies for every holliday. This recipe combinds that tradition with a modern influence of mine. Enjoy for Christmas, New Years or Valentine's Day!

Ingredients

  • 1 cup butter, softened
  • 2/3 cup sugar
  • 1 - large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all purpose flour
  • 1/3 cup cocoa, unsweetened
  • 1/2 teaspoon salt
  • 16 ounces package oreo chocolate sandwich cookies—i use the mint ones
  • 8 ounces philadelphia cream cheese, softened
  • 7 ounces peppermint candies (the round red and white kind)

How To Make kitty's chocolate mints

  • Step 1
    preheat oven to 350 deg
  • Step 2
    Cream butter, sugar, egg and vanilla in a large mixing bowl until light and fluffy
  • Step 3
    Add mixture of flour, cocoa and salt gradually and mix well. Chill dough for 10 min in mixing bowl before adding to cookie press
  • Step 4
    Press dough through cookie press onto cool ungreased cookie sheet (I used a round pattern). Bake at 350° for 10 to 15 minutes or until set
  • Step 5
    Remove cookies onto wire rack to cool completely Crush or grind peppermints in food processor to a crumb and place on a plate for final garnish
  • Step 6
    Grind Oreos in food processor until fine and add soft cream cheese. Blend until smooth
  • Step 7
    Spread room temperature filling on the flat side of one cookie and place another on top to form a sandwich. Press down so that filling bulges out on sides a little bit
  • Step 8
    Roll the edges of each sandwich in crushed peppermint and allow them to firm back up in the fridge before serving
