This is the low carb version of that skillet chocolate chip cookie we all know and love.

Ingredients

  • 2 tablespoons cold butter
  • 1/2 cup salted butter, melted
  • 3 tablespoons brown sugar substitute
  • 3 tablespoons sweetener
  • 1 1/2 teaspoons vanilla bean paste or extract
  • 1 large egg
  • 2 cups almond flour
  • 3/4 cup sugar-free semi sweet chocolate chips

How To Make keto chocolate chip skillet cookie

  • Step 1
    Preheat oven to 350 degrees. Using the 2 Tablespoons of butter, spread around the sides and bottom of a 9 or 10-inch cast iron skillet or cake pan.
  • Step 2
    In a large bowl, mix the butter, sweeteners, vanilla, and egg.
  • Step 3
    Add the almond flour and chocolate chips, stir to combine.
  • Step 4
    Pour into prepared pan or skillet and pat down with spoon or fingers. Bake 20 minutes, or until set in the middle.
  • Step 5
    Allow to cool 5-10 minutes before cutting into 8 wedges and serving warm.
