kentucky's chewy chocolate cookies

KENTUCKY: Munch your way across the USA. Judy Dahman, the state of KY is now represented. This recipe is from "Capitol Cookies", with recipes from every state & Washington, DC. This recipe was submitted by Capital City Christian Church, Frankfort, KY, Lelia Todd, Chairperson. NOTE: This is a very stiff batter so I added in 3 to 4 tablespoons of milk and they turned out great! Very good, chewy and chocolatey.

Ingredients

  • 1/4 cup butter, softened
  • 2 cups granulated sugar
  • 2 medium eggs
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour, unsifted
  • 3/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons milk (may take 4)
  • 1 cup nuts, finely chopped (optional)

How To Make kentucky's chewy chocolate cookies

  • Step 1
    Cream butter and sugar in large mixer bowl. Add in eggs, milk and vanilla and blend well.
  • Step 2
    Combine flour, cocoa, baking soda and salt. Blend into creamed mixture; add more milk if needed. Stir in nuts.
  • Step 3
    Drop by teaspoonfuls onto lightly sprayed cookie sheet. Bake at 350 for approximately 8-9 minutes. Do not overbake. Cookies will be soft. They will puff during baking and flatten upon cooling.
  • Step 4
    Cool on cookie sheet until set, about one minute. Remove to wire rack to cool completely.
