I needed to use up some oatmeal and I happened to have some chocolate chips on hand... Voila, the world's best chocolate chip oatmeal cookies!

Ingredients

  • 1 cup butter at room temperature
  • 1 cup packed light brown sugar
  • 1/2 cup cane sugar
  • 2 - eggs
  • 4 teaspoons vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups quick cooking oats
  • 2 cups semi-sweet chocolate chips

How To Make katy's chocolate chip oatmeal cookies

  • Step 1
    Preheat to 325 degrees
  • Step 2
    In a large bowl, cream together the butter, brown sugar, and cane sugar until smooth. Beat in eggs one at a time, then stir in vanilla.
  • Step 3
    In a separate bowl combine flour, baking soda, and salt. Stir into the creamed mixture gradually until just blended.
  • Step 4
    Mix in the oats and chocolate chips.
  • Step 5
    Drop by heaping spoonfuls onto greased baking sheet(s).
  • Step 6
    IMPORTANT: Baking time is APPROXIMATELY 12 minutes. The edges of the cookies should be golden brown and the centers still soft.
  • Step 7
    Remove from heat and allow cookies to cool for 5 minutes on the baking sheet before transferring to a wire rack to finish cooling.
  • Step 8
