katy's chocolate chip oatmeal cookies
I needed to use up some oatmeal and I happened to have some chocolate chips on hand... Voila, the world's best chocolate chip oatmeal cookies!

Makes about a dozen cookies.
Ingredients
- 1 cup butter at room temperature
- 1 cup packed light brown sugar
- 1/2 cup cane sugar
- 2 - eggs
- 4 teaspoons vanilla extract
- 1 1/4 cups all purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3 cups quick cooking oats
- 2 cups semi-sweet chocolate chips

Step 1Preheat to 325 degrees

Step 2In a large bowl, cream together the butter, brown sugar, and cane sugar until smooth. Beat in eggs one at a time, then stir in vanilla.

Step 3In a separate bowl combine flour, baking soda, and salt. Stir into the creamed mixture gradually until just blended.

Step 4Mix in the oats and chocolate chips.

Step 5Drop by heaping spoonfuls onto greased baking sheet(s).

Step 6IMPORTANT: Baking time is APPROXIMATELY 12 minutes. The edges of the cookies should be golden brown and the centers still soft.

Step 7Remove from heat and allow cookies to cool for 5 minutes on the baking sheet before transferring to a wire rack to finish cooling.
