My Mother used to make these every year during the Christmas Season. You can actually put a hook in them and decorate your tree with these cookies. They're more like a yummy coconut candy than a cookie to me.

Ingredients

1 c
all-purpose flour (sifted)
1 c
flaked coconut
1 stick
margarine or butter
1/2 c
light brown sugar
1/2 c
light corn syrup
1 tsp
vanilla

How to Make Karo Lace Cookies

Step-by-Step

  • 1In a separate bowl, mix together flour and coconut.
  • 2In a medium saucepan, over medium heat, melt margarine. Add brown sugar and Karo syrup, and stir until it comes to a low boil and all ingredients have blended together.
  • 3Remove saucepan from heat and gradually stir in flour/coconut mixture. Then add the vanilla.
  • 4Line your cookie sheet with aluminum foil or parchment paper. Drop cookie mixture, by scant teaspoonfuls, about three inches apart on the foil, or paper, lining your pan.
  • 5Bake in a 350 degree oven for @ 10-12". (I like for mine to get lightly browned around the edges, which takes a couple of minutes longer.)
  • 6Remove from oven, and place on rack to cool. These take several minutes - about 5", or so - to cool enough to touch. Peel off of the foil or paper & bake more!
  • 7Warning: These ARE addictive, lol!
