This recipe was apparently first published when John F. Kennedy was a senator,in the 1960's! I came across the recipe in a Nantucket cookbook of mine,and the contributor claims to be a friend of his! The cookies are tasty no matter what... and like many cookie dough's,can be made ahead,kept in the frig for about 2 weeks till you are ready to bake them.This is one cookie we make ahead at Christmas time.But they're just plain good,crispy,nutty,lemony and easy to make anytime!Just "slice 'n bake"...and enjoy!!!

Ingredients For jfk's favorite slice 'n bake cookie

1 cbutter

1/2 cbrown sugar, light

1/2 cwhite sugar

1egg,beaten

2 Tbsplemon juice (and an extra for good luck!)

1/2 cwalnuts,chopped

1 Tbspgrated lemon rind

3 call purpose flour

1/4 tspbaking soda

1/4 tspsalt

1Mix as per usual for cookies-cream the butter and sugar,then add the egg,juice,rind.Stir well then add the dry ingredients-flour,baking soda and salt.Stir in nuts last.

2Form the dough into a 2in wide log..or maybe 2?.I just make logs-and don't really measure width's! Wrap in Saran Wrap and chill in frig till dough is firm - a couple of hours.

3Remove from frig and with a sharp knife,cut slices-not too thick(or thin). Place on an UNgreased cookie sheet and bake at 400 degrees for 10-12 min's. Remove to a cookie rack and let cool.
