A great neighbor and friend, Kaye Montieth, (from TN but now in TX) gave me this recipe many years ago. I always think of her whenever I make them. These are sweet but good. UPDATE: (5/1/12) Kaye's son, Kyle, and I hooked up on facebook. He told me that Kaye died in 2003 from melanoma skin cancer. She was in her early 50's. I cried when I read his message. This recipe is now more special than ever.

Ingredients

  • 1 1/2 sticks butter or margarine
  • 1 cup sugar
  • 12 ounces can evaporated milk
  • 1 - egg, beaten slightly
  • 7 ounces coconut, flaked
  • 1 1/2 cups pecans or walnuts, chopped
  • 1 box graham crackers plus 1 cup graham cracker crumbs
  • FROSTING:
  • 1/2 stick butter or margarine
  • 2 cups powdered sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract

How To Make kaye's jerome bars

  • Step 1
    BARS: Bring to a boil the butter, sugar, evaporated milk & egg. Remove from heat & add the coconut, nuts and 1 cup of graham cracker crumbs.
  • Step 2
    Spread 1/2 box of whole graham crackers in shallow pan and pour the boiled mixture on top. Place the remaining whole graham crackers over that then frost & cut.
  • Step 3
    FROSTING: Melt butter, then gradually add powdered sugar & mix well. Add the milk & vanilla & mix to a spreading consistency. You may need to add more milk to achieve that consistency.
  • Step 4
    KEEP REFRIGERATED. These are sweet so you can't eat a belly full.
