Ingredients
- 1/4 pound butter, softened
- 1/4 pound ricotta cheese
- 1 teaspoon pure vanilla extract
- 1 cup sugar
- 1 - egg
- 2 cups sifted all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
How To Make italian ricotta cookies

Step 1Blend softened butter and ricotta until creamy. Add vanilla. Mix well. Add sugar gradually, beating until well blended. Add egg and mix well. Slowly stir in dry ingredients and blend well. Drop from a teaspoon onto parchment lined cookie sheet.

Step 2Bake in 350-degree oven for 10 minutes. Yields 30-36 cookies depending on size.
