How to Make Italian Ricotta Cookies
- Blend softened butter and ricotta until creamy. Add vanilla. Mix well. Add sugar gradually, beating until well blended. Add egg and mix well. Slowly stir in dry ingredients and blend well. Drop from a teaspoon onto parchment lined cookie sheet.
- Bake in 350-degree oven for 10 minutes. Yields 30-36 cookies depending on size.
