I can't even remember where I learned this recipe, I have been making them every Christmas for 20 + years, and my family loves them. Using ricotta in the batter makes them so soft and almost cake-like.

1 csoft butter (2 sticks)

2 tspvanilla extract

1 pkgricotta cheese (15 oz)

4 call-purpose flour

1 tspsalt

1 tspbaking soda

How To Make italian christmas sugar cookies

1Combine butter, sugar, eggs, and vanilla.

2Then add ricotta and mix well.

3Add the dry ingredients - flour, salt, and baking soda. Mix well and drop by tablespoons onto a cookie sheet lined with parchment paper, or a greased cookie sheet.

4Bake 350* 10 minutes or so, just barely lt golden on the edges.

5Remove to cooling rack. Cool completely before putting vanilla frosting on top.

6Frost, then add sprinkles. If you have any left, store them in the fridge.
