italian christmas sugar cookies
I can't even remember where I learned this recipe, I have been making them every Christmas for 20 + years, and my family loves them. Using ricotta in the batter makes them so soft and almost cake-like.

- 1 cup butter, softened
- 2 cups sugar
- 3 - eggs
- 2 teaspoons vanilla extract
- 15 ounces ricotta cheese
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 package vanilla frosting
- - Christmas sprinkles

Step 1Preheat oven to 350 degrees F. In a large bowl, combine the butter, sugar, eggs, and vanilla.

Step 2Add ricotta and mix well.

Step 3Add the dry ingredients and mix well. Drop by the tablespoon onto a cookie sheet lined with parchment paper, or a greased cookie sheet.

Step 4Bake for 10 minutes or so, until just barely golden on the edges.

Step 5Transfer to a cooling rack. Cool completely before frosting.

Step 6Frost, then add sprinkles. If you have any left, store them in the fridge.
