inside out chocolate covered cherry cookies

These cookies are soooo good! They taste like an inside out chocolate covered cherry and are really easy to make. I looked for recipes on the internet, but none of them were exactly what I was looking for so I kinda Frankenstein'ed a recipe together from all the things I read online. What I was going for was a nice crispy cherry shortbread outside that was soft and chewy on the inside with the kiss in the middle. The result was almost exactly what I was going for except the outside is a bit less crispy than I'd like, but it is still amazing.

Ingredients For inside out chocolate covered cherry cookies

2 stickbutter

1/3 csugar

1/3 cbrown sugar

1 tspvanilla extract

2 cflour
-
1/3 canchopped walnuts
-
1 jarmaraschino cherries (diced)

2 Tbspcherry juice
-
14 Oz pkghershey's kisses
How To Make inside out chocolate covered cherry cookies

1Cream the butter and sugar(s) together. Add the vanilla and mix well. Stir in the flour, walnuts, cherries and juice til well combined. Dough will be a bit stiff at first, you can knead it by hand if it's easier for you.

2When dough is well combined, roll out a 1 inch ball, flatten it in your palm and wrap it around a Hershey's kiss. Continue this process 'til all the dough is used. Bake on an ungreased cookie sheet in a 375 degree oven for 12-14 minutes.

3Cool on the cookie sheet for about 5 minutes before transferring them to a plate or cooling rack. Enjoy!
