These delicious cookies are in memory of my Mother, Hazel Perkins. She use to make these every year at Christmas. It is an old recipe. I don't know where she got it. All I know is as kids & adults we loved them and looked forward to them every year. Luckly I got the recipe from her, just 1 year before she passed away. I am going to make them for my children this year and surprise them. They haven't had any in 18 yrs. PS, the longer these cookies set the better they are. The graham crackers get soft. Hope you will try them.

Ingredients
- 1 cup granulated sugar
- 2 sticks margarine
- 1/2 cup milk
- 1 1/2 cups graham cracker crumbs
- 1 cup chopped dates
- 1 cup chopped pecans
- 1 box honey graham crackers
- POWDER SUGAR ICING
- 3/4 stick margarine (soften)
- 2 cups powdered sugar
- 1 teaspoon vanilla flavoring
How To Make ice box cookies

Step 1In a sauce pan, melt margarine, add sugar & milk. Bring to a boil. Don't let boil, just bring to a boil.

Step 2Add to hot mixture, graham cracker crumbs, chopped dates, & chopped pecans.

Step 3Line a cookie sheet with whole graham crackers. put filling on top of graham crackers, then put another layer of graham crackers on top of filling and let cool.

Step 4When cooled, spread the powder sugar icing on top of graham crackers, you can add a little milk to make icing spread better if needed. Place in refrigerator until cold. Cut into squares and enjoy. wh
