i heart you cookies for my sweetheart

In keeping with valentines and red, white and pink for our sammie challenge I wanted to make my sweetie something he would remember. I used my "Butter Cutout Cookies" recipe for my heart shaped cookies, added a raspberry filling, made a sweetheart sammie and glazed. The raspberry filling took these cookies over the top! You can use the store bought refrigerator cookies,just roll them out and cut in desired shapes. Ingredients

  • 4 large heart shape butter or sugar cookie
  • 2 - small/med heart shape butter or sugar cookie
  • - raspberry preserves, seedless
  • GLAZE
  • 1 cup powdered sugar
  • 1 tablespoon corn syrup, light
  • 1 plus tablespoon milk
  • 1/4 teaspoon almond extract
  • - food coloring, i used americolor #120 super red, #126 bright white, #132 soft pink

How To Make i heart you cookies for my sweetheart

  • Step 1
    DIRECTIONS FOR GLAZE: Place all ingredients, except the food coloring, into a medium sized bowl; whisk to combine.
  • Step 2
    You want it thick like a thick syrup. Add more powdered sugar to thicken, and more milk to thin.
  • Step 3
    Add the food coloring, stir until well combined.
  • Step 4
    Pour the icing into a condiment bottle. Be sure to put the cap on to ensure it doesn't dry out. Repeat steps for each additional color.
  • Step 5
    DECORATING COOKIES Spread raspberry preserves on the back side of 2 large cookies.
  • Step 6
    Top with second (large) cookie, pressing backs together with raspberry in center.
  • Step 7
    Working on a wire rack, glaze all cookies in desired color. Pipe in designs if desired. NOTE: place wax paper under rack for easy clean up.
  • Step 8
    Let the glaze firm up enough to handle, then gently slide the small heart off wire rack on to end of your fingers. Ease the small heart on top (in the center) of the sandwich cookie. Add more designs if desired. Let dry for 24 hours.
  • Step 9
    Serve to your sweetheart with love!
