I make these Jewish cookies every year FOR PURIM and give a bag out to many people....usually the ones who have tried them always ask WHEN ARE YOU GUNNA MAKE THOSE TRIANGLE COOKIES AGAIN! These are addicting. NOTICE....NO EGGS N NO BUTTER ;)

Ingredients
- 6 cups flour
- 1 cup white sugar
- 1 cup orange juice
- 2 cups vegetable oil
- 1 1/2 teaspoons cinnamon
- 1 1/2 teaspoons baking powder
- 1 jar apricot preserves
- 1 jar rasberry preserves
How To Make hamentachen

Step 1MIX ALL INGREDIENTS. (except preserves) in large bowl and knead for about 5 minutes. REMOVE 1/2 DOUGH N FLATTN OUT TO 1/4" or so

Step 2take a glass and make enough circles to fill up flattened dough...pick up excess and put in bowl with other half of dough.

Step 3PREHEAT OVEN 375 FLATTN one circle at a time and put 1 tsp. of preserves in center n fold up three sides to form a triangle and pinch corners.

Step 4PLACE HAMENTACHEN ON COOKIE SHEETS....NO PREPPING OF PAN IS NEEDD. BAKE FOR ABOUT A HALF HOUR OR UNTIL GOLDEN BROWN.

Step 5CONTINUE FORMING HAMENTACHEN WITH REMAINN DOUGH (MIGHT need to be kneaded for another minute before continuing )

Step 6ONCE THEY HAVE BROWND A BIT REMOVE FROM OVEN N LET COOL....(TASTES EVEN BETTER NEXT DAY) ...ENJOY :)

Step 7UPDATE...TRADITIONAL PRUNE NOW ADDED TO MY DELICIOUS HAMENTACHEN ;) HAPPY PURIM!
