Ingredients
- 2 1/4 cups ap flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup quick oats....not instant
- 1 cup dark brown sugar, packed
- 1/2 cup white sugar
- 1 cup butter, softened
- 2 tablespoons honey
- 2 teaspoons vanilla extract
- 2 large egg
- 1 1/2 cups raisins
- 1/2 cup chopped walnuts

Step 1Preheat oven to 300 degrees. In a medium bowl combine, flour, soda, salt and oats Mix with whisk and set aside Mix both sugars in a large bowl.Add butter and mix with mixer til grainy. Scrape down sides and add honey, vanilla and eggs. Mix on medium speed until combined. Add the flour mixture, raisins and walnuts and mix at low speed. DO NOT OVER MIX!! I found the dough to be stiff so i finished mixing by hand with a wooden spoon. Bake on an ungreased cookie sheet 18 - 20 mins.
