In the early '80's my Mom found a recipe for breakfast cookies in the local newspaper. Through many experiments, I tweaked the recipe to make it my own. It is a favorite of my mother-in-law's, who likes the great fiber content. A healthy carb that can also be enjoyed with yogurt of your choice.

Ingredients

3/4 c
butter, softened
1/3 c
honey
1/4 c
brown sugar, firmly packed
2
eggs, beaten
1 tsp
vanilla
2 c
rolled oats (long cooking oatmeal)
1/3 c
wheat bran
3/4 c
whole wheat pastry flour
1/2 tsp
baking soda
1 tsp
cinnamon
1 tsp
nutmeg
1/4 tsp
salt
1/2 c
raisins or cranraisins
1 c
pecans, chopped

How to Make Hearty Breakfast Cookies

Step-by-Step

  • 1Cream together butter, honey, brown sugar, eggs and vanilla.
  • 2In a separate bowl combine rolled oats, wheat bran, whole wheat pastry flour, baking soda, cinnamon, nutmeg and salt. Combine with creamed mixture, mixing well. Mix in raisins and chopped pecans.
  • 3Cover and chill for at least a 1/2 hour. Roll dough into quarter-sized balls, place on lightly greased cookie sheets and flatten slightly with a fork.
  • 4Bake at 350 degrees in a preheated oven for 15 minutes or until lightly browned.
