hearty breakfast cookies

In the early '80's my Mom found a recipe for breakfast cookies in the local newspaper. Through many experiments, I tweaked the recipe to make it my own. It is a favorite of my mother-in-law's, who likes the great fiber content. A healthy carb that can also be enjoyed with yogurt of your choice.

Ingredients

  • 3/4 cup butter, softened
  • 1/3 cup honey
  • 1/4 cup brown sugar, firmly packed
  • 2 - eggs, beaten
  • 1 teaspoon vanilla
  • 2 cups rolled oats (long cooking oatmeal)
  • 1/3 cup wheat bran
  • 3/4 cup whole wheat pastry flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup raisins or cranraisins
  • 1 cup pecans, chopped

How To Make hearty breakfast cookies

  • Step 1
    Cream together butter, honey, brown sugar, eggs and vanilla.
  • Step 2
    In a separate bowl combine rolled oats, wheat bran, whole wheat pastry flour, baking soda, cinnamon, nutmeg and salt. Combine with creamed mixture, mixing well. Mix in raisins and chopped pecans.
  • Step 3
    Cover and chill for at least a 1/2 hour. Roll dough into quarter-sized balls, place on lightly greased cookie sheets and flatten slightly with a fork.
  • Step 4
    Bake at 350 degrees in a preheated oven for 15 minutes or until lightly browned.
