hearty breakfast cookies
In the early '80's my Mom found a recipe for breakfast cookies in the local newspaper. Through many experiments, I tweaked the recipe to make it my own. It is a favorite of my mother-in-law's, who likes the great fiber content. A healthy carb that can also be enjoyed with yogurt of your choice.

Ingredients
- 3/4 cup butter, softened
- 1/3 cup honey
- 1/4 cup brown sugar, firmly packed
- 2 - eggs, beaten
- 1 teaspoon vanilla
- 2 cups rolled oats (long cooking oatmeal)
- 1/3 cup wheat bran
- 3/4 cup whole wheat pastry flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup raisins or cranraisins
- 1 cup pecans, chopped
How To Make hearty breakfast cookies

Step 1Cream together butter, honey, brown sugar, eggs and vanilla.

Step 2In a separate bowl combine rolled oats, wheat bran, whole wheat pastry flour, baking soda, cinnamon, nutmeg and salt. Combine with creamed mixture, mixing well. Mix in raisins and chopped pecans.

Step 3Cover and chill for at least a 1/2 hour. Roll dough into quarter-sized balls, place on lightly greased cookie sheets and flatten slightly with a fork.

Step 4Bake at 350 degrees in a preheated oven for 15 minutes or until lightly browned.
