In the early '80's my Mom found a recipe for breakfast cookies in the local newspaper. Through many experiments, I tweaked the recipe to make it my own. It is a favorite of my mother-in-law's, who likes the great fiber content. A healthy carb that can also be enjoyed with yogurt of your choice.

Ingredients

  • 3/4 c
    butter, softened
  • 1/3 c
    honey
  • 1/4 c
    brown sugar, firmly packed
  • 2
    eggs, beaten
  • 1 tsp
    vanilla
  • 2 c
    rolled oats (long cooking oatmeal)
  • 1/3 c
    wheat bran
  • 3/4 c
    whole wheat pastry flour
  • 1/2 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1 tsp
    nutmeg
  • 1/4 tsp
    salt
  • 1/2 c
    raisins or cranraisins
  • 1 c
    pecans, chopped

How to Make Hearty Breakfast Cookies

Step-by-Step

  1. Cream together butter, honey, brown sugar, eggs and vanilla.
  2. In a separate bowl combine rolled oats, wheat bran, whole wheat pastry flour, baking soda, cinnamon, nutmeg and salt. Combine with creamed mixture, mixing well. Mix in raisins and chopped pecans.
  3. Cover and chill for at least a 1/2 hour. Roll dough into quarter-sized balls, place on lightly greased cookie sheets and flatten slightly with a fork.
  4. Bake at 350 degrees in a preheated oven for 15 minutes or until lightly browned.
