Ingredients
- 2 cups sifted flour
- 2 teaspoons powder
- 1/2 teaspoon salt
- 2/3 cup shortening
- 1 1/4 cups sugar
- 1 egg
- 1 teaspoon vanilla
- 1/2 teaspoon almond extract
- 3/4 cup well drained pineapple (i would use crushed)
- 1/2 cup finely chopped coconut

Step 1Sift together flour, powder and salt. Cream shortening, sugar and extracts thoroughly. Beat in egg until mixture is fluffy. Blend in pineapple and dry ingredients. Drop by tsp on ungreased cookie sheet 3" apart. Sprinkle with coconut. Bake in 325 degree (slow) oven for about 20 min. Cookies are better if stored overnight.
