Happynut says pretty much about my taste of all different nuts and coconut.SO my little cook diva helper BRi,always has great recipes. Working with kids its lots of fun,they say and do the crazy things. love ....????

Ingredients

  • 3/4 c
    flaked coconut
  • 1/2 c
    real butter
  • 1 pkg
    (8 ounces) chopped dates
  • 3/4 c
    chopped walnuts
  • 2 large
    eggs
  • 3/4 c
    trivia fine sugar
  • 3 1/2 c
    crispy rice cereal(or any extra crispy wheat puffs,any kind rice cereal no mane works great too.

How to Make Happynut date coconut balls

Step-by-Step

  1. PREHEAT oven to 350 *
    BAKE coconut,stirring occasionally, 5 to 6 minutes or until toasted. SET ASIDE
  2. MELT butter in large skillet over low heat.
    ADD your dates and nuts;cook over low heat,stirring constantly until dates are softened.
    COOL to touch (about 5 minutes.)
  3. BEAT eggs and trivia.Granulated sweetener for 3 minutes at medium speed with an electric mixer;ADD to date mixture.

    COOK low-heat ,stirring constantly ,until mixture thickens (about 3 minutes.)

    STIR in the rice cereal .COOL to touch.SHAPE into 1- inch balls. ROLL in the toasted coconut.
