These are my favorite cookies. I have been making these for about 15 years.

Ingredients

  • 4 c
    flour
  • 2 c
    old fashioned oats (uncooked)
  • 1 1/2 c
    butter
  • 2 c
    brown sugar, firmly packed
  • 1 can(s)
    16 oz pumpkin
  • 1 c
    chocolate chips
  • 1 1/2 c
    raisins
  • 1 c
    walnuts or pecans, chopped (opt)
  • 2 tsp
    baking soda
  • 1 large
    egg
  • 2 tsp
    ground cinnamon
  • 1 tsp
    salt
  • 1 tsp
    vanilla
  • 1 c
    white sugar

How to Make Great pumpkin cookies

Step-by-Step

  1. Cream butter and sugars together.
  2. Add egg and vanilla and mix well
  3. Sift dry ingredients together.
  4. Alternate dry ingredients and pumpkin to butter mixture
  5. Stir in chocolate chips and nuts.
  6. Drop on ungreased cookie sheet and bake at 350 degrees for 20 to 25 mins.
  7. Cool.
