This was one of my favorites growing up. Grandma and mom would cut them very thin so we would have a very crispy cookie.

These do need about 3 hours of chill time.

How to Make GREAT GRANDMA MEINDERS ICE BOX COOKIES

Step-by-Step

  1. Cream sugar and butter, then egg.
  2. Stir in remaining ingredients.
  3. Divide dough into two sections and roll into two rolls, wrap in plastic and refrigerate until very firm (about 2-3 hours).
  4. Heat oven to 350 F.
  5. Thin slice and bake for 10-15 minutes until golden brown. (watch close they burn quickly)
