great grandma meinders ice box cookies
This was one of my favorites growing up. Grandma and mom would cut them very thin so we would have a very crispy cookie. These do need about 3 hours of chill time.

Ingredients
- 1/2 pound butter, room temperature
- 1 cup sugar
- 1 - egg
- 1 teaspoon vanilla extract
- 3 cups flour
- 1/2 cup walnuts, chopped
How To Make great grandma meinders ice box cookies

Step 1Cream sugar and butter, then egg.

Step 2Stir in remaining ingredients.

Step 3Divide dough into two sections and roll into two rolls, wrap in plastic and refrigerate until very firm (about 2-3 hours).

Step 4Heat oven to 350 F.

Step 5Thin slice and bake for 10-15 minutes until golden brown. (watch close they burn quickly)
