This is my original recipe that took me a while to get right. This cookie is NOT a snickerdoodle! It is a thin, crispy, buttery delight. Just like that warm cinnamon toast my grandma used to make for me. Enjoy!

Grandma's cinnamon toast cookies are wonderful! They're filled with the nostalgic flavor of cinnamon toast, in a cookie form. Super easy to make, they're similar to a snickerdoodle being rolled in sugar, but without the tang of cream of tartar and way more cinnamon flavor. So, if you're a cinnamon lover, these are for you. They're thin, slightly chewy, and crisp around the edges. A wonderful cookie to enjoy year-round, but they'd be tasty on a holiday cookie plate.

Ingredients

  • 2 1/4 cups all purpose flour
  • 1 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup butter flavored shortening
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons ground cinnamon
  • 2 large eggs
  • CINNAMON/SUGAR MIXTURE
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon

How To Make grandma's cinnamon toast cookies

  • Combine flour and salt in a small bowl.
    Step 1
    Preheat oven to 375 degrees F. Combine flour and salt in a small bowl.
  • Beat butter, shortening, granulated sugar, brown sugar, vanilla extract, and ground cinnamon.
    Step 2
    Beat butter, shortening, granulated sugar, brown sugar, vanilla extract, and 2 Tbsp ground cinnamon in a large mixer bowl until creamy.
  • Add eggs one at a time.

    Add eggs, one at a time, beating well after each addition.
  • Gradually beat in flour mixture.

  • Form a rounded tablespoon and roll in the cinnamon/sugar mixture.
    Step 5
    Form a rounded tablespoon and roll in the cinnamon/sugar mixture. Then move onto ungreased baking sheets. The mixture may need to be refrigerated for about 10 minutes in order to handle with cinnamon/sugar mixture.
  • Flatten out slightly with the bottom of a buttered glass.

  • Bake cookies and cool.

    Bake for 9 to 11 minutes or until golden brown around the edges and slightly soft in the center (just like your grandma’s cinnamon toast!). Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
