This comes from a special friend who was our neighbor, when we lived in FL, with the first four of our six children; Grandma Zemke, widowed, had no grandchildren so, "adopted" ours. She was the chief cook of an exclusive camp, every summer in the Bahamas for a wealthy family. She helped me to revise the recipe to make in a 9 x 13 baking dish instead of 8". It is delicate and not overwhelmingly sweet. I celebrate my memory of Grandma Zemke.

Ingredients For grandma zemke's lemon bar cookies

  • BOTTOM CRUST
  • `1 c
    butter
  • 2 c
    all purpose flour (can use gluten free flour with 1/2 tsp xanthan gum)
  • 1/2 c
    powdered sugar
  • FILLING
  • 4
    eggs, beaten
  • 2 c
    sugar
  • 6 Tbsp
    lemon juice
  • 1 tsp
    baking powder
  • 1/2 c
    flour

How To Make grandma zemke's lemon bar cookies

    Combine crust ingredients; Press into 9 x 13 x 2" baking pan Bake at 350 degrees for 20 minutes.

    While crust is baking, mix filling ingredients; Pour mixture over crust and bake 20 minutes more or until light golden brown.

    Sprinkle with powdered sugar; Cut into squares or bars.
