My grandma sent this recipe to me a long time ago. I use to make them once in a while..If you like pinapple and a soft cookie, try these different ones.

Ingredients

  • 1/2 c
    shortening
  • 1/2 c
    white sugar
  • 1/2 c
    brown sugar
  • 1/2 c
    crushed pinapple, drained
  • 1/4 tsp
    soda
  • 1
    egg
  • 1/2 tsp
    salt
  • 2 tsp
    baking powder
  • 1 1/2 c
    flour
  • 1/2 c
    chopped nuts
  • 1 tsp
    vanilla extract

How to Make Grandma Ruth's Pinapple Cookies

Step-by-Step

  1. Preheat oven at 350 degrees.
  2. Cream fat and sugars. Add egg.
    Combine soda and pinapple.
  3. Sift salt & baking powder with flour.
    Mix all together. Add nuts and vanilla.
    Mix and drop by spoonfulls on greased cookie sheet.
    350 degrees about 10 minutes.
  4. These are best fresh. If you put them in a cookie jar, put wax paper between layers as they will stick together.
