How to Make Grandma Frobel's Date-Filled Cookies
1For the dough:
Mix thoroughly the shortening, 1 cup sugar, and eggs.
2Stir in cream and vanilla.
3Sift together and blend in the flour, baking soda and salt. Chill dough for about 1 hour.
4For the filling:
In a heavy saucepan, mix together dates or prunes, 3/4 cup sugar, water, lemon juice, and butter.
5Cook slowly, stirring constantly until thickened. Cool to room temperature.
6Roll out the dough very thin on a lightly floured surface. Cut into 3-inch rounds with a cookie cutter or glass.
7Place on a lightly greased cookie sheet. Place a rounded teaspoon of filling in the center. Fold over like a turnover and pinch edges shut.
8Bake at 400F until delicately browned (around the edges). About 8-10 minutes. Cool on wire racks.
