Grandma Ferrante knew how to bake biscotti. While amazing, the aroma of these biscotti baking is nothing compared to their fantastic taste. They are a crispy cookie flavored with vanilla extract and a hint of anise extract. This recipe is a blank slate where you can get creative with add-ins. Nuts are traditional but mini chocolate chips would be great too. Perfect for dipping into coffee or hot chocolate.

Ingredients
- 1 cup softened margarine
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon anise extract
- 4 cups all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt

Test Kitchen Tips
If you find the dough is runny in step 3, slowly add more flour until the dough comes together. In step 5, if you find the cookies are too big cut them in half.

Step 1Cream margarine and sugar until fluffy.

Step 2Add eggs and beat adding flavorings.

Step 3Sift the flour, baking powder, and salt. Mix dry ingredients into creamed butter.

Step 4Turn the dough out onto a floured surface. Divide the dough in half and shape it like an egg.

Step 5Place on a greased or parchment paper-lined baking sheet and bake at 375 for about 20 minutes or until lightly browned. Remove from the oven and cut the dough diagonally about 1 inch wide.

Step 6Lay the biscotti on their side and bake for 5 - 10 minutes more on each side until browned.

Step 7If desired, add nuts to the cookie, dip an end in melted chocolate, or drizzle melted chocolate over the biscotti.
