Ingredients

  • 1 stick butter, melted and cooled
  • 1 cup sugar
  • 1/2 cup flour
  • 2 - eggs
  • 1 teaspoon vanilla
  • 1 cup chopped pecans, toasted
  • 1 cup mini chocolate chips
  • 1 - 9" unbaked pie shell

How To Make gooey cookie pie bites - steph

  • Step 1
350 degree oven. In a bowl combine the butter, sugars, flour, eggs, and vanilla. When combined, stir in chocolate chips and nuts. Set aside.
  • Step 2
Right out of the box the pie crust is way too thick. Lightly flour your rolling surface and roll out crust so it is about 13 - 14" in diameter. Just remember, it should be pretty thin, and will expand while cooking. You will need to cut out some circles and then re-roll the pie crust.
  • Step 3
A 2.75" circle fits a mini muffin pan perfectly. Use a cookie cutter, or cup from your cupboard. Mix all ingredients and pour into pie shells. Bake for 20 - 25 minutes. The tops will get crinkly and golden brown. Let cool for a minute and they should pop right out of the pan. DELISH!!!
