gluten/grain free chocolate chip cookie

This cookie is gluten & grain free. They taste like a regular wheat based cookie .. not gritty like the ones made with rice flour. And not too sweet .. just right!

Ingredients
- 3 tablespoons unsalted butter, softened
- 1/2 cup packed lt brown sugar
- 1/4 cup granualted sugar (i used coconut sugar)
- 2 tablespoons oil .. veggie or coconut
- 1 egg - lightly beaten
- 1/2 cup coconut flour
- 1/2 cup almond flour
- 1 teaspoon xanthan gum
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup chocolate chips .. (whatever chips you like)
- 1/4 cup chopped walnuts .. or any other nut (optional)

Step 1Preheat oven to 350 .. Line a baking sheet with parchment paper. In a lg bowl, mash the butter & sugars with a fork until combined....

Step 2In a small bowl, whisk the egg & oil til creamy, stir in the vanilla...

Step 3In a medium bowl whisk the flours, baking soda and salt...

Step 4Add the flour mixture to the butter mixture, mix well (all I used was a fork .. and it worked fine)

Step 5Gently fold in the chocolate chips & nuts. Drop rounded tablespoons on to cookie sheet .. you could flatten out a bit .. I didn't .. and mine came out pretty hardy & chewy ..

Step 6Bake for 8-10 mins, depending on your oven .. ENJOY!
