gluten/grain free chocolate chip cookie

This cookie is gluten & grain free. They taste like a regular wheat based cookie .. not gritty like the ones made with rice flour. And not too sweet .. just right!

Ingredients

  • 3 tablespoons unsalted butter, softened
  • 1/2 cup packed lt brown sugar
  • 1/4 cup granualted sugar (i used coconut sugar)
  • 2 tablespoons oil .. veggie or coconut
  • 1 egg - lightly beaten
  • 1/2 cup coconut flour
  • 1/2 cup almond flour
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup chocolate chips .. (whatever chips you like)
  • 1/4 cup chopped walnuts .. or any other nut (optional)

How To Make gluten/grain free chocolate chip cookie

  • Step 1
    Preheat oven to 350 .. Line a baking sheet with parchment paper. In a lg bowl, mash the butter & sugars with a fork until combined....
  • Step 2
    In a small bowl, whisk the egg & oil til creamy, stir in the vanilla...
  • Step 3
    In a medium bowl whisk the flours, baking soda and salt...
  • Step 4
    Add the flour mixture to the butter mixture, mix well (all I used was a fork .. and it worked fine)
  • Step 5
    Gently fold in the chocolate chips & nuts. Drop rounded tablespoons on to cookie sheet .. you could flatten out a bit .. I didn't .. and mine came out pretty hardy & chewy ..
  • Step 6
    Bake for 8-10 mins, depending on your oven .. ENJOY!
