This cookie is gluten & grain free. They taste like a regular wheat based cookie .. not gritty like the ones made with rice flour. And not too sweet .. just right!

  • 3 Tbsp
    unsalted butter, softened
  • 1/2 c
    packed lt brown sugar
  • 1/4 c
    granualted sugar (i used coconut sugar)
  • 2 Tbsp
    oil .. veggie or coconut
  • 1 egg
    lightly beaten
  • 1/2 c
    coconut flour
  • 1/2 c
    almond flour
  • 1 tsp
    xanthan gum
  • 1/2 tsp
    baking soda
  • 1/4 tsp
  • 1/3 c
    chocolate chips .. (whatever chips you like)
  • 1/4 c
    chopped walnuts .. or any other nut (optional)

How to Make gluten/grain free chocolate chip cookie


  1. Preheat oven to 350 .. Line a baking sheet with parchment paper. In a lg bowl, mash the butter & sugars with a fork until combined....
  2. In a small bowl, whisk the egg & oil til creamy, stir in the vanilla...
  3. In a medium bowl whisk the flours, baking soda and salt...
  4. Add the flour mixture to the butter mixture, mix well (all I used was a fork .. and it worked fine)
  5. Gently fold in the chocolate chips & nuts. Drop rounded tablespoons on to cookie sheet .. you could flatten out a bit .. I didn't .. and mine came out pretty hardy & chewy ..
  6. Bake for 8-10 mins, depending on your oven .. ENJOY!
