Gluten Free Thick soft and chewy chocolate chip cookies

These are awesome gluten free cookies and could pass off without anyone knowing...

2 1/2 c
gluten free all purpose flour - i use jules
1/2 tsp
xanthan gum
1/2 tsp
1 tsp
baking soda
1 pkg
white chocolate instant pudding. i used sugar free
1/2 c
butter - room temp
1/2 c
1 1/2 c
brown sugar, firmly packed
2 tsp
gluten free vanilla
large eggs
12 oz
chocolate chips
1 c
chopped nuts (optional)


1Preheat Oven to 375 Degrees
2Mix all dry ingredients and set aside. Beat butter and shortening till creamy. Add Brown Sugar and Vanilla until well blended. Beat in Eggs one at a time. Slowly add flour mixture. With Spoon Stir in Chocolate Chips and Nuts.. Drop Batter in 2 TBSP portions 2 inches apart on ungreased cookie sheet. Bake until edges are browned and about 1” area in center of cookie is still pale. Approx. 10 Minutes.
