If you can't have gluten and enjoy chocolate chip cookies, you'll enjoy this recipe. They're crispy outside and chewy in the middle. Buttery and sweet, no one will guess they're gluten-free. In fact, they taste better than some traditional chocolate chip cookie recipes we've tried.

Ingredients
- 2 1/2 cups Gluten-free all-purpose flour with xanthan gum
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 package sugar-free white chocolate instant pudding (3.3 oz)
- 1/2 cup butter, room temp
- 1/2 cup shortening
- 1 1/2 cups brown sugar, firmly packed
- 2 teaspoons gluten-free vanilla extract
- 2 large eggs
- 12 ounces chocolate chips
- 1 cup chopped nuts (optional)
How To Make gluten-free chocolate chip cookies

Step 1Preheat oven to 375 degrees. Mix all dry ingredients and set aside.

Step 2Beat butter and shortening until creamy.

Step 3Add brown sugar and vanilla. Mix until well blended.

Step 4Beat in eggs, one at a time.

Step 5Slowly add flour mixture.

Step 6With a spoon, stir in chocolate chips and nuts.

Step 7Drop the batter into 2 Tbsp portions, 2 inches apart on an ungreased cookie sheet.

Step 8Bake until edges are browned and about 1” area in the center of the cookie is still pale approximately 10 minutes.
