gluten free pizzelles
Being gluten free it was hard to give up an old family favorite, until I found this recipe. Tastes so good no one can even tell the difference!

Ingredients
- 1/4 cup vegetable oil
- 1/4 cup butter or margarine, softened
- 1/4 cup solid vegetable shortening
- 1 1/2 cups sugar
- 6 - eggs
- 1 1/2 teaspoons anise flavoring
- 2 1/2 cups "gluten-free pantry" french bread and pizza mix
- 2 teaspoons baking powder
How To Make gluten free pizzelles

Step 1Beat together vegetable oil, butter,shortening and sugar. Add eggs and anise and beat until smooth and fluffy. Combine bread mix and baking powder. Add to liquid and beat until blended. Mixture will be very thick. Preheat Pizzelle maker according to manufacturer's directions. Drop batter by teaspoon full and cook 30-40 seconds or until lightly browned.
