This is a fast gluten free cookie to whip up! My husband hates store bought cookies that are gluen free. He only likes stuff that taste normal.

How to Make Gluten Free Peanut Butter Cookies

Step-by-Step

  1. mix p/btr with sugar really good, then add egg & mix til well combined. Sometimes I add some vanilla. You can add some g/f choc. chips. (I use Nestles)
  2. Spray pan lightly with Pam. Use a spoon & drop onto baking sheet,then with fork, mash down with a criss cross. You can sprinkle with sugar. Bake around 11 minutes in 350 oven or til of desired crispness, depending on size of cookies you spoon out. I'd test one first.
  3. For "Peanut Butter Cup Cookies"(pictured)~You can also take this same recipe, & drop 1 spoonful of dough into a sprayed mini muffin pan. Bake 14-15 min. When you take out of oven, press 1 miniature reese's peanut butter cup (gluten free) down into each one while hot. Let cool at least 15 minutes before removing from pan. Slide a knife around edges to loosen before lifting out. It helps if you have more than one pan to work with.
