These spice cookies are a perfect way to get in to the Christmas or Holiday Spirit. The warmth of cooking with a blend of spices just seems to bring back memories of good times with friends and family. These are very much like little ginger breads. The addition of the coarse sugar adds a new dimension to the soft and slightly chewy cookie. I made several batches of different cookies for an Open Artist Studio Event at my home last week and these were by far the most popular. Ingredients

  • 2 sticks butter, unsalted
  • 1 1/4 cups dark brown sugar
  • 2 large eggs
  • 1/2 cup molasses
  • 1 teaspoon kosher salt
  • 3 teaspoons pumpkin pie spice (i like spice hunter)
  • 1 1/2 teaspoons baking soda
  • 4 1/2 cups all purpose flour
  • 8 ounces coarse crystalline sugar (for rolling the dough in)

How To Make glistening spice cookies

  • Step 1
    In a large bowl, beat softened butter with the brown sugar.
  • Step 2
    Add eggs one at a time and beat until well incorporated.
  • Step 3
    Stir in the molasses.
  • Step 4
    Stir in salt, spice, baking soda and flour.
  • Step 5
    Pour some of the crystal sugar in a small bowl and add more as needed to roll 1 1/4 inch balls of dough in. Make the balls of dough by hand. Completely coat the dough balls with the sugar.
  • Step 6
    Bake 12 cookies at a time on an ungreased cookie sheet in a 350 degree oven for 10 minutes.
  • Step 7
    Transfer cookies to a rack to cool completely. Store in an airtight container. Makes about 52 cookies.
