pineapple cookies with cream cheese glaze

This recipe is my very favorite cookie recipe! The cookies are light and delicate and very delicious! Perfect for a bridal luncheon or women's group meeting. We have them on special occasions.

Ingredients

  • 2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon soda
  • 1/4 teaspoon salt
  • 3/4 cup crushed pineapple/drained reserve juice
  • 1/2 cup shortening/butter
  • 1 cup brown sugar, lightly packed
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • GLAZE TOPPING
  • 1 cup confectioners' sugar
  • 2 -3 tablespoon reserved pineapple syrup
  • 2 tablespoons cream cheese
  • 1 tablespoon butter

How To Make pineapple cookies with cream cheese glaze

  • Step 1
    Drain pineapple, reserving some syrup for the glaze. Cream shortening and sugar, add egg blend well. Mix in pineapple and gradually add dry ingredients, and vanilla.
  • Step 2
    Drop by teaspoonfuls on cookie sheet (spray lightly with no-stick spray) Bake at 325 degrees for 10 - 15 minutes (depending on size of cookies)
  • Step 3
    Mix 1 cup of confectioners sugar, the cream cheese, butter and enough reserved pineapple juice to make a soft glaze/frosting. Lightly frost cookies and let dry before stacking.
