pineapple cookies with cream cheese glaze
This recipe is my very favorite cookie recipe! The cookies are light and delicate and very delicious! Perfect for a bridal luncheon or women's group meeting. We have them on special occasions.

Ingredients
- 2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon soda
- 1/4 teaspoon salt
- 3/4 cup crushed pineapple/drained reserve juice
- 1/2 cup shortening/butter
- 1 cup brown sugar, lightly packed
- 1 large egg
- 1 teaspoon pure vanilla extract
- GLAZE TOPPING
- 1 cup confectioners' sugar
- 2 -3 tablespoon reserved pineapple syrup
- 2 tablespoons cream cheese
- 1 tablespoon butter
How To Make pineapple cookies with cream cheese glaze

Step 1Drain pineapple, reserving some syrup for the glaze. Cream shortening and sugar, add egg blend well. Mix in pineapple and gradually add dry ingredients, and vanilla.

Step 2Drop by teaspoonfuls on cookie sheet (spray lightly with no-stick spray) Bake at 325 degrees for 10 - 15 minutes (depending on size of cookies)

Step 3Mix 1 cup of confectioners sugar, the cream cheese, butter and enough reserved pineapple juice to make a soft glaze/frosting. Lightly frost cookies and let dry before stacking.
