Ingredients

8 3/4oz. crushed pineapple
2 c
all purpose flour
1 1/2 tsp
baking powder
1/4 tsp
baking soda
1/4 tsp
salt
1/2 c
shortening
1 c
firmly packed brown sugar
1
egg
1 tsp
vanilla extract
4 c
sifted confectioners sugar

How to Make GLAZED PINEAPPLE COOKIES

Step-by-Step

  • 1Drain pineapple reserving liquid.
  • 2Preheat oven to 400 degrees/ Lightly grease cookie sheets.
  • 3Sift flour with baking powder, soda and salt. In a large bowlbeat shorting and brown sugar untill light and fluffy. Beat in egg and vanilla. Add pinrapple. Mix well. Stir in flour mixture until well combined.
  • 4Drop by rounded teaspoonfuls spacing 2 inches apart ontp prepared cookie sheets. Bake 8 to 10 minutes or untill golden brown,(do not overbake) Transfer cookies to wire racks.
  • 5Mix confectioners sugar with 3-4 tablespoons reserved pineapple liquid to make glaze. Stir until smooth. Spread tops of warm cookies with glaze.
  • 6ENJOY!!!!!
