Makes 60 cookies
1 Hr
40 Min

1/2 c
butter, softened
1 c
white or brown sugar, packed
1 large
egg (not extra large)
1 1/2 Tbsp
orange zest
2 Tbsp
dark corn syrup or substitute molasses (more traditional)
3 c
all purpose flour
2 tsp
baking soda
2 tsp
ground cinnamon
1 tsp
ground ginger (more, if you like)
1/2 tsp
ground cloves
1/2 tsp

1Cream butter and sugar together. Add egg, and mix well. Mix in orange zest (if using), and corn syrup or molasses. Add, remaining ingredients, mixing, until well combined.
2Chill dough, several hours to overnight.
3When ready to bake, preheat oven, to 375°F. Grease cookie sheets. Let refrigerated dough, sit on counter for a few minutes; then, on a lightly floured surface, roll out 1/4 or 1/3 size clumps, after kneading it slightly. Keep the dough that isn't being used yet, in the refrigerator.
4Roll out dough to 1/4 inch thick. Cut into desired shapes, using cookie cutters. Place cookies 1 inch apart, on prepared cookie sheets.
5Bake cookie dough 10-12 minutes, until cookies are firm and lightly toasted on edges. Makes 5 dozen or 60 cookies.
