Ingredients
- 3/4 cup butter
- 1 cup sugar
- 1/4 cup molasses
- 1 - egg
- 2 teaspoons baking soda
- 2 cups flour
- 1/2 teaspoon clove, ground
- 2 cans cinnamon
- 1/2 teaspoon salt
- 4 ounces crystallized ginger, cut up
- FOR THE FILLING:
- 1/2 cup butter
- 1/4 cup shortening
- 2 cups powdered sugar
- - zest of lime
- 1 teaspoon lime juice
- 2 teaspoons milk as needed
How To Make ginger snap cookies and lime sandwiches

Step 1mix butter, sugar, molasses and egg. add in dry ingredients and mix well. let sit in fridge for at least 1 hour.

Step 2use cookie scoop to measure out 1 inch balls, roll in sugar and place on cooking sheet lined with parchment paper.

Step 3bake at 375 for 8-10 minutes.

Step 4they will puff up during baking but deflate as they cool.

Step 5the cookies get crunchy on the outside but stay soft on the inside.

Step 6for the filling: combine ingredients and mix well.

Step 7use as much lime flavor for your preference.

Step 8add buttercream to one cookie and make a sandwich.
