ginger snap cookies and lime sandwiches

i remember my friend mary's mother making these when we were little we be gone on our bikes all day and come back to her house to these great cookies

Ingredients

  • 3/4 cup butter
  • 1 cup sugar
  • 1/4 cup molasses
  • 1 - egg
  • 2 teaspoons baking soda
  • 2 cups flour
  • 1/2 teaspoon clove, ground
  • 2 cans cinnamon
  • 1/2 teaspoon salt
  • 4 ounces crystallized ginger, cut up
  • FOR THE FILLING:
  • 1/2 cup butter
  • 1/4 cup shortening
  • 2 cups powdered sugar
  • - zest of lime
  • 1 teaspoon lime juice
  • 2 teaspoons milk as needed

How To Make ginger snap cookies and lime sandwiches

  • Step 1
    mix butter, sugar, molasses and egg. add in dry ingredients and mix well. let sit in fridge for at least 1 hour.
  • Step 2
    use cookie scoop to measure out 1 inch balls, roll in sugar and place on cooking sheet lined with parchment paper.
  • Step 3
    bake at 375 for 8-10 minutes.
  • Step 4
    they will puff up during baking but deflate as they cool.
  • Step 5
    the cookies get crunchy on the outside but stay soft on the inside.
  • Step 6
    for the filling: combine ingredients and mix well.
  • Step 7
    use as much lime flavor for your preference.
  • Step 8
    add buttercream to one cookie and make a sandwich.
