How to Make Ginger Dream Cookies
- Preheat oven 350 degrees.
In a medium bowl stir together with a whisk the flour, ginger, baking soda, cinnamon, cloves and salt. Set aside.
In a large bowl beat shortening, sugar, cream, eggs and molasses on low speed until well blended. Add dry mixture, a little at a a time on low speed, mix until blended. - I sometimes make giant cookies using an ice cream scoop, spray the inside. If not I use a heaped table spoon. Place remaining sugar in a shallow plate. Drop dough by scoopfuls or spoonfuls onto sugar, Roll, coat well. then place on cookie sheet.
If I am making with ice cream scoop, I do six per pan, otherwise I do twelve.
Bake 11-13 min, do not over bake. You want these chewy and soft! - I use my KitchenAid mixer to make these with little mess and a lot of saved time!
