ginger-cranberry bites
I was in the baked goods, but not sweets mode. These were a good compromise. I played with a ginger-spice cookie recipe to create these.

Ingredients
- 2 1/2 cups flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 tablespoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup oil
- 1/2 cup applesauce
- 1/2 cup molasses
- 3/4 cup sugar
- 1 cup dried cranberries
How To Make ginger-cranberry bites

Step 1Preheat oven to 325 degrees. In medium size mixing bowl mix flour, baking powder, baking soda, ginger, cinnamon, nutmeg, and salt.

Step 2In a separate large mixing bowl mix oil, applesauce, and molasses. Mix in sugar.

Step 3Slowly add flour mixture to wet mixture, about 1/4 cup at a time.

Step 4After all flour mixture is added fold in the cranberries.

Step 5Roll dough into balls (should yield about 36 balls).

Step 6Lightly grease cookie sheet and place balls on cookie sheet. Bake for 18-20 minutes.

Step 7Remove from oven, use spatula to remove balls and place on a wire rack to cool. After cool, store in an airtight container.
