Ingredients
- 2 cups brown sugar, packed
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla
- 2 - eggs
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 cups quick cooking (or regular) oats
- 2 tablespoons unsalted butter
- 14 ounces sweetened condensed milk
- 12 ounces semi-sweet chocolate chips
- 1 cup toasted pecans, chopped (or nuts of your choice)
- 1 teaspoon vanilla
- 1/2 teaspoon salt
How To Make fudgy oatmeal bars

Step 1Heat oven to 350 degrees.

Step 2Mix brown sugar, 1 cup butter, 1 teasoon vanilla, and the eggs.

Step 3Stir in flour, baking soda and 1/2 teaspoon salt; stir in oats.

Step 4Reserve 1/3 of the oat mixture.

Step 5Press remaining oat mixture in a greased jelly roll pan, 15 1/2×10 1/2×1 inch.

Step 6Heat 2 tablespoons butter, the milk and chocolate chips over low heat, stirring constantly, until chocolate is melted; remove from heat.

Step 7Stir in nuts, 1 teaspoon vanilla and 1/2 teaspoon salt to chocolate mixture.

Step 8Spread chocolate mixture over oat mixture in pan.

Step 9Drop reserved oat mixture by rounded teaspoonfuls onto chocolate mixture.

Step 10Bake unitl golden brown, 25 to 30 minutes. Cut bars into about 2×1 inch, while warm. 70 bars; 135 calories per bar. *If using self-rising flour, omit baking soda and 1/2 teaspoon salt.
