This was the first recipe that my grandmother let me help make. It is still one of my favorites, even though I am now diabetic & have to watch what I eat. It is always a big hit when taken to parties.

Ingredients For fudgy macaroons

  • 3/4 c
    granulated sugar
  • 1/2 c
    evaporated milk
  • 2 Tbsp
    butter or margarine
  • 6 oz
    chocolate or butterscotch morsels
  • 1 tsp
    vanilla extract
  • 2 c
    cornflakes
  • 1 1/4 c
    coconut
  • 1/2 c
    chopped walnuts

How To Make fudgy macaroons

  • 1
    Mix sugar, milk and butter; cook over medium heat until mixture comes to a full boil. Boil two more minutes, stirring constantly.

    Remove from heat and add chocolate or butterscotch morsels and vanilla. Stir until morsels melt.

    Blend in cornflakes, coconut, and nuts. Drop by tablespoon onto waxed paper. Let stand until set. Makes 4-5 dozen pieces.

    Recently, I replaced the cornflakes with Special K Cinnamon/Pecan and Honey Bunches of Oats w/Almonds. I am also pretty liberal with the coconut & nuts -- frequently use both walnuts & pecans. Also, used a combination of vanilla & almond extract. There is so much that you can do with this recipe to make it yours!
