fudgy macaroons
(1 RATING)
This was the first recipe that my grandmother let me help make. It is still one of my favorites, even though I am now diabetic & have to watch what I eat. It is always a big hit when taken to parties.

Ingredients
- 3/4 cup granulated sugar
- 1/2 cup evaporated milk
- 2 tablespoons butter or margarine
- 6 ounces chocolate or butterscotch morsels
- 1 teaspoon vanilla extract
- 2 cups cornflakes
- 1 1/4 cups coconut
- 1/2 cup chopped walnuts
How To Make fudgy macaroons
-
Step 1Mix sugar, milk and butter; cook over medium heat until mixture comes to a full boil. Boil two more minutes, stirring constantly.
-
Step 2Remove from heat and add chocolate or butterscotch morsels and vanilla. Stir until morsels melt.
-
Step 3Blend in cornflakes, coconut, and nuts. Drop by tablespoon onto waxed paper. Let stand until set. Makes 4-5 dozen pieces.
-
Step 4Recently, I replaced the cornflakes with Special K Cinnamon/Pecan and Honey Bunches of Oats w/Almonds. I am also pretty liberal with the coconut & nuts -- frequently use both walnuts & pecans. Also, used a combination of vanilla & almond extract. There is so much that you can do with this recipe to make it yours!
