fruit pulp cookies

Growing up very poor i was taught to never throw food away because we couldn't afford to replace it. As I've gotten older, I've kept that lesson close to my heart and even being a juicer I always tried to find a way to use the pulp left over from fruits and veggies. This is a great recipe and I've used it many times for a quick treat that's more nutritional than other cookies and uses the pulp that I'm left with from juicing.

Ingredients
- 2 - eggs
- 2 cups fruit pulp (any you like)
- 2 cups sugar, white
- 2 teaspoons baking soda
- 4 cups flour, all-purpose
- 1 teaspoon cloves
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- OPTIONAL
- 2 cups chopped nuts (any)
- 2 cups raisins or currants
How To Make fruit pulp cookies

Step 1Preheat oven to 350F

Step 2Mix all ingredients in order listed above.

Step 3Drop by teaspoonful on a greased cookie sheet (ungreased if silicon).

Step 4Bake 12-15 minutes or until golden brown.
