Ingredients
- 1 cup shortening, butter flavor
- 1 1/2 cups brown sugar
- 2 - eggs beaten
- 1 teaspoon vanilla
- 3 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 cups rhubarb diced
- 3/4 cup coconut
How To Make frosted rhubarb cookies

Step 1cream together shortening, brown sugar, and vanilla. Add beaten egg. Mix well. Add in dry ingredients. Mix to combined. Fold in rhubarb and coconut. Drop onto greased baking sheet by rounded tablespoon. Bake for 10-14 minutes. or till golden brown. 350 degrees When cooled top with either vanilla or cream cheese frosting.
