frosted pumpkin cookies

I have yet to find one person who doesn't fall in love with these cookies! The cooked brown sugar frosting is the perfect topping for a pumpkin cookie. I usually double the recipe because they go so fast and everyone wants them! These have been passed down in our family and are easy yet delectable. Hope you all enjoy them.

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup shortening
  • 1 cup sugar
  • 1 cup canned pumpkin
  • 1 - egg
  • 1 teaspoon vanilla
  • 1 cup chopped dates or raisins (optional)
  • BROWN SUGAR FROSTING
  • 3/4 cup brown sugar
  • 3 tablespoons butter
  • 4 tablespoons milk or cream
  • 1 cup powdered sugar
  • 3/4 teaspoon vanilla

How To Make frosted pumpkin cookies

  • Step 1
    For the cookies, sift all dry ingredients together and set aside.
  • Step 2
    Cream shortening and sugar together till fluffy. Add pumpkin and eggs and beat. Add dates or raisins if desired.
  • Step 3
    Add all dry ingredients to the shortening mixture and stir well. Drop by rounded spoonfuls onto an ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes. Cool before frosting.
  • Step 4
    For the brown sugar frosting. Mix the brown sugar, butter and milk together in a heavy saucepan and boil for 2 minutes.
  • Step 5
    Remove from heat and stir in the powdered sugar and the vanilla. Beat well. If frosting hardens while you work,place over low heat for a short time to soften while continuously stirring.
