The mechanics at work were getting bored with my basic chocolate chip cookies I’d bring in to them (ungrateful, I know!). So one wanted snickerdoodles and one wanted frosted sugar cookies so I made a compromise. These taste like the middle part of a cinnamon roll! And they are named after my friend at work, Nick, who is also very sweet.

Ingredients

  • 1 c
    butter, softened
  • 1 1/2 c
    sugar
  • 2 large
    eggs
  • 2 tsp
    vanilla extract
  • 1 1/2 tsp
    cream of tartar
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 3/4 c
    flour
  • 1 Tbsp
    sugar
  • 2 tsp
    cinnamon
  • 1-8 oz
    cream cheese, room temperature
  • 1/2 c
    butter, softened
  • 1 pinch
    salt
  • 1 tsp
    vanilla extract
  • 3 c
    powdered sugar

How to Make Frosted Nickerdoodles

Step-by-Step

  1. Preheat oven to 350
    *optional turn on some good music and grab a cocktail
  2. Set eggs in a dish of warm water to get to room temp
  3. Soften butter in microwave
  4. Cream butter and 1 1/2 cups sugar in mixer
  5. Add eggs and vanilla. Scrape down the bowl.
  6. Add cream of tartar, salt, and soda
  7. Add flour and mix just until incorporated
  8. spray a 9 x 13” pan with cooking spray and press dough into pan
  9. Combine 1 T sugar and 2 t cinnamon then sprinkle over the top
  10. Bake 22-26 minutes. Don’t over bake!
  11. This recipe makes a lot of frosting which my boys love! Feel free to not use all or half the recipe. While bars are cooling start the frosting by softening one stick (1/2 cup) butter then soften 8 oz cream cheese
  12. Mix butter and cream cheese then add pinch of salt and vanilla
  13. Add 3 cups powdered sugar and mix well. I spread it on my bars while they were still warm to make it easier. Then refrigerate until frosting is set.
