I got this recipe at a cookie exchange several years ago and they are delish!

Ingredients

  • 1/2 cup butter, softened
  • 1 cup brown sugar, packed
  • 1 - egg
  • 1/2 teaspoon vanilla extract
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1/3 cup sour cream
  • 1 3/4 cups salted cashews, divided
  • 2 cups flour

How To Make frosted cashew cookies

  • Step 1
    Cream butter and brown sugar until fluffy. Beat in egg and vanilla. Add dry ingredients, alternating with sour cream; mix well. Fold in nuts, reserving some for the top of frosting. Bake at 400 degrees for 10 minutes on a greased baking sheet. Frost and top each cookie with a cashew. Yields: 4 doz.
  • Step 2
    Frosting: 1/2 c. butter, 3 T. cream, 1/4 t. vanilla extract, 2 c. powdered sugar. Lightly brown the butter in a pan. Remove from heat and add cream and vanilla. Gradually stir in powdered sugar. Beat until thick. DECADENCE!
