fresh orange spritz cookie (wilton)
A nice twist on the Classic Spritz Cookie recipe. A cookie press lets you change disks to produce many different shapes. Be sure to chop the nuts very fine otherwise they will clog your cookie press! Serve them plain, sprinkled with decorations or sugars, frosted or dipped in melted candy! Quick Tip: Before making the dough, place your cookie sheets in the freezer. Cold cookie sheets cause the cookies to quickly release from your cookie press.

Ingredients
- 1 cup butter, softened
- 1 cup sugar, granulated
- 1 - egg yolk
- 2 tablespoons orange juice
- 2 1/4 cups all purpose flour
- 1 tablespoon orange zest
- 1/4 cup pecans, finely chopped (optional)

Step 1Preheat oven to 350°F.

Step 2In mixer bowl, cream butter and sugar. Beat in egg and orange juice.

Step 3Mix in flour, orange rind and optional pecans.

Step 4Mix just until combined. Dough should be soft but not sticky.

Step 5Shape dough into small logs and place in Cookie Press.

Step 6Using desired disk, press shapes onto ungreased cookie sheet.

Step 7Bake 10-12 minutes or until edges are lightly browned.

Step 8Cool 2 minutes on cookie sheet on rack.

Step 9Remove from cookie sheet and cool completely on rack.
