I made these years ago, and loved the flavor. I intend to use this batter in my waffle cone iron, to shape cones and bowls to fill with mousse, ice cream or other desserts.

Ingredients

  • 1/2 cup unsifted all-purpose flour
  • 1 tablespoon cornstarch
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 cup salad oil (or melted butter?)
  • 1/4 cup egg whites (~2)
  • 1 teaspoon vanilla
  • 11-1/2 teaspoons water

How To Make fortune cookies

  • Step 1
    Combine flour, cornstarch, sugar and salt.
  • Step 2
    Stir in Salad oil (or melted butter).
  • Step 3
    Add lightly beaten egg whites, vanilla and water and stir until smooth.
  • Step 4
    Have fortunes ready, and bake one cookie at a time, so cookie does not harden before shaping.
  • Step 5
    Pour scant 1/3 cup batter in center of baking sheet that is lightly greased with shortening.
  • Step 6
    Use a spatula to spread bater ito an 8-inch circle, then tilt pan in circular motion to make an even 9 inch circle.
  • Step 7
    Bake in 300 degree oven, 13 to 16 minutes, until a light golden brown.
  • Step 8
    Use wide spatula to immediately loosen from pan. Insert fortune. Pick up opposite sides (leaving middle on pan) press sides together and hold in place for about 5 seconds. FInish shaping by bending cookie over flat edge.
