fortune cookies
I made these years ago, and loved the flavor. I intend to use this batter in my waffle cone iron, to shape cones and bowls to fill with mousse, ice cream or other desserts.

Ingredients
- 1/2 cup unsifted all-purpose flour
- 1 tablespoon cornstarch
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/4 cup salad oil (or melted butter?)
- 1/4 cup egg whites (~2)
- 1 teaspoon vanilla
- 11-1/2 teaspoons water
How To Make fortune cookies

Step 1Combine flour, cornstarch, sugar and salt.

Step 2Stir in Salad oil (or melted butter).

Step 3Add lightly beaten egg whites, vanilla and water and stir until smooth.

Step 4Have fortunes ready, and bake one cookie at a time, so cookie does not harden before shaping.

Step 5Pour scant 1/3 cup batter in center of baking sheet that is lightly greased with shortening.

Step 6Use a spatula to spread bater ito an 8-inch circle, then tilt pan in circular motion to make an even 9 inch circle.

Step 7Bake in 300 degree oven, 13 to 16 minutes, until a light golden brown.

Step 8Use wide spatula to immediately loosen from pan. Insert fortune. Pick up opposite sides (leaving middle on pan) press sides together and hold in place for about 5 seconds. FInish shaping by bending cookie over flat edge.
